Toppings
  1. Mix apple cubes with cinnamon, flour, and sugar until evenly coated. Set aside.
  2. Combine all crumble ingredients in a bowl. Press with fingers to form pea-sized pieces. Set aside.
Cheesecake Batter
  1. Beat cream cheese and sugar in a large bowl until smooth.
  2. Add eggs and vanilla extract, mixing until combined.
  3. Mix in sour cream and cornstarch until well blended.
  4. Pour cheesecake batter over the chilled crust.
  5. Top with cinnamon apple mixture, then sprinkle crumble evenly over the top.
  6. Bake for 50–60 minutes, until the centre jiggles slightly.
