- Mix in the peanut butter until fully incorporated.
- In a small bowl, lightly beat the egg with a whisk. Pour the beaten egg into the butter and sugar mixture, whisking everything together until fully combined.
- Sift in the cake flour,salt and cornstarch. Use a spatula to gently mix until everything is combined and a dough forms.
- Choose Your Shape: a) Piping Option: Transfer the dough into a piping bag (using a double bag for strength since the dough is thick). Pipe small rounds onto a lined baking sheet. b) Rolling Option: Scoop about 2 teaspoons of dough, roll it into a ball, and place it on a lined baking sheet. Use the back of a teaspoon to create a dimple on top of each ball.
- Sprinkle crushed roasted peanuts on each cookie, gently pressing to help them stick.
- Place the cookie dough in the fridge for 30 minutes to firm up.
- Preheat your oven to 330°F.
- After chilling, bake the cookies in the preheated oven for 17 minutes. They should be lightly golden around the edges.
- Allow the cookies to cool on the baking sheet for 5-7 minutes to firm up before transferring them to a wire rack to cool completely.
Notes
Texture Differences: If you choose to pipe the dough, the cookies will be thinner and crunchier. Rolling the dough into balls will result in thicker, chewier cookies. Either way, they are delicious!
