  4. Add butter, knead for 10–15 minutes until smooth and slightly sticky (25–30 minutes by hand).
  5. Shape dough into a ball, cover, and let rise for 1 hour or until doubled in size.
  6. Prepare 64 cooking strings, 15–20 cm each.
  7. Divide dough into 16 pieces. Shape into balls.
  8. Place 4 strings in a crisscross pattern, centre the dough ball, and loosely tie to create a pumpkin shape. Repeat for all pieces.
  9. Place dough balls on baking sheets (8 per sheet). Cover and let rise for 1 hour.
  10. Preheat oven to 395°F. Bake for 15 minutes until golden brown.
  11. Cool slightly, remove strings, and poke a hole in each bun.
Filling
  1. Mix cream cheese, brown sugar, cinnamon, ginger, and pumpkin purée until smooth.
  2. Transfer to a piping bag and fill each bun.
Coating
